Cheers to the Jewish New Year! Judaism has a different calendar and this year we are celebrating 5780. Wow We Old! And so are our traditions. We celebrate by dipping ‘apples into honey’ to symbolize a sweet year ahead. Most families celebrate by sharing a meal with friends and bringing items filled with this sweet combination.

I was inspired to share this colorful fall salad as a healthy alternative.

Ingredients:

1 medium butternut squash

1 large apple

1/2 cup sunflower seeds

1/2 cup pomegranate seeds

A few bushels of greens (can use kale- i used butter lettuce)

1 head of garlic

Dressing:

1/2 cup olive oil

1 tbsp apple cider vinegar

1 lemon- juiced

1 tbsp dijon mustard

1 tbsp honey (local honey is best!)

(Will add the garlic from above)

salt/pepper



Cut into cubes + Roast Butternut Squash at 400 degrees F (200 degrees C) for 20 minutes. On the same pan add your garlic. Cut the top of the garlic head + Add Olive Oil. Wrap in aluminum foil and Roast on the same dish. Allow to cool. Quick mutlitask- Prep the rest of the ingredients for the salad. Best to make the salad day of- but can make a day or two early and leave out dressing until right before. Blend all the dressing ingredients in your blender + Roasted garlic cooled. Mix well + Serve!
