Brunch is NOT my thing! I know I know you loooove it. That late morning overload of carbs, sugar, and of course BOOOOZE. But today we will discuss my overnight French Toast! Totally Brunch (or Dunch?) appropriate!

Found this recipe from Mama Knows Gluten Free but I tweaked it slightly!

Recipes for me are more of a… guideline. Something to get ideas from but not use word for word. Pretty much I read the ingredients and skip to the Bake for how long section! GUILTY

Easy prep ahead of time!

Stopped by Blike Bakery a gluten free bakery on the outskirts of Tel Aviv. Challah really is the BEST choice for Overnight French Toast. Need to prep ahead? Few day old toast is event better! Coat the bread in coconut oil and sprinkle your cinnamon sugar mixture. Bake in 350 degree oven for 5-10 minutes. Allow to COOL. (Adds a little crunch to your bake!)

While bread is cooling. Mix 6 eggs with 1 1/2 cups of plant based milk. If you’re like me then you mix it all and spilled half of it before trying again. Add 1 tsp vanilla.

Prep the crumble. 1 cup gluten free flour (can use oat flour as well). Mix with 1/2 cup of butter or coconut oil. 1/2 cup coconut sugar. 1 tsp cinnamon. 1 tsp nutmeg. Set to the side.

Time to Layer: Coat the empty dish with coconut oil. Sprinkle with 1/4 cup coconut sugar at the bottom.

Add toast. Top with egg mixture. COVER + SAVE SAFELY. In the fridge overnight.

Save crumble to add RIGHT before you bake!

Ok it’s easy and simple and makes me happy!

2 cups confectioners sugar

1/4 cup melted butter (or margarine)

1 tsp vanilla extract

*Store in fridge + add right before serving

I will do anything for a ‘get together’. I am finally feeling more ‘settled’ in my new home. New friends, new recipes, renewed energy! Lucky to help coordinate a movie playdate with my new international gang of girls! Their first time watching Hocus Pocus and my first time attempting this Overnight French Toast.
