Back in ACTION! And ready to Meal Prep!

Let’s get after it! First up this week is Teriyaki Salmon.

Teriyaki Salmon

Ingredients

Salmon

3- 1/2 lb filets (most places can pre-cut the fish for you)

1 head of Broccoli

2 cups Snow Peas

2 bushels of Bok Choy


1/2 cup Sesame Oil (more for saute)

1/4 cup Peanut Oil

1 cup Coconut Amino Acids (alternative to Soy Sauce)

1 tbsp Garlic Powder

1 tbsp Hoison Sauce

1-2 tbsp Honey

1-2 tbsp Tapioca Starch (alternative to Corn Starch)

1 cup of Water

Get Cookin’

Bake Salmon 15-20 minutes at 350 degrees with sesame oil and ground ginger to coat. You want it slightly undercooked. Sauté broccoli and snow peas in sesame or peanut oil. Wilt Bok Choy lightly. Mix all sauce ingredients off the heat first. Add water and starch last. Bring up to a boil. Once boiling lower and stir to thicken a few minutes!

My tip to successful MEAL PREP: Keep it all separate. It last longer if you put it together day of... even if you are taking this whole dish to the office for work lunch or saving it at home for dinner. Adding it all together right before you eat will ensure it’s freshness! Plus now you have extra Teriyaki sauce for dippin’ later!
